Sourdough Waffles

adjusting this recipe to make 2 full size waffles in our iron:

Flour Mix

Mix the night before

  • 240g flour
  • 225g sourdough starter (100% hydration)
  • 180g yogurt

Let sit out overnight

Batter

Mix dry ingredients into milk, whisk eggs, add butter and milk mixture, then fold in the starter mix

  • 75g milk, or water
  • 1.5t baking powder
  • 2T sugar
  • 1t salt
  • 2 eggs
  • 3T butter melted

% water: (recalculate, aiming for original)

Let sit out overnight

Mix dry ingredients into milk, whisk eggs, add butter and milk mixture, then fold in the starter mix

  • 20g milk
  • 1.5t baking powder
  • 2T sugar
  • 1t salt
  • 2 eggs
  • 3T butter melted

Total weight: 720g, makes two waffles at 360g each

% water: 100 flour x 121 water

To increase slightly, try adding 60g flour, 75 water?
