- in mason jar, cover with 1c. boiling water for 1/2 hour
- roasted at 375 for 14? minutes, stir once or twice

- 1/4c brown sugar
- 1T cumin
- 1T coriander
- 1t fennel
- 1t cayenne
- 1t pimentón mild
- 2t chipotle
- 1t black pepper
- 1t salt
add 1/4c olive oil after rubbing chicken
Chicken, nuggets
- 5% brine for 1 hour.
- flour, egg, breadcrumbs
- 425 for 15 minutes
Egg, coddled
- 6 minutes simmer, added hot

- 360g flour
- 230g water
- 16g salt
- 0.66g yeast
24 hours at room temperature, ~36 additional hours fridge, ~5 hours before baking shape and rest at room temp
Refrigerator Pickles
- 1/3c rice vinegar
- 1T white wine
- 1.5c hot water
- 5T sugar - in g?
- 1T+1t salt

Waffle Cones
- 1 whole egg
- 1 egg white
- 1⁄4 teaspoon salt
- 1⁄4 cup granulated sugar
- 2⁄3 cup sifted all-purpose flour

2 tablespoons butter melted and cooled slightly
- beat eggs and salt
- add sugar 1 minute
- incorporate flour and remove lumps
- Spoon 3 tablespoons (1 1⁄2 ounces) of batter per waffle
